| Abstract: | Objective: To visually analyze the research status and hot spots of the crayfish food, and to provide a bibliometric reference for the research and industrial development of the crayfish food in China. Methods: With Citespace software as the research tool and CNKI database as the literature source, we searched and obtained the literature statistical data, and the bibliometric analysis of crayfish food was conducted from the aspects of annual publication volume, key words, researchers, research institutions, research field, research hotspot. Results: This study selected 491 papers related to crayfish food. Bibliometrics shows that crayfish research has developed rapidly since 2016, with related research fields continuously expanding, and related research is gradually refined and deepened. Major domestic research institutions include Wuhan Polytechnic University and Hubei Provincial Institute of Fishery Sciences. The main researchers include Chen Jiwang, Xiong Guangquan, etc. In the early stage, the research content mainly focused on the crayfish breeding mode, and in recent years, it gradually expanded to sterilization and preservation, nutritional quality, quality and safety and other aspects. Conclusion: The analysis results show that the crayfish research in China started late and the development trend is rapid, the number of research papers is still insufficient compared with the industrial scale, and the cooperation between researchers and institutions is less. In the future, it is necessary to further strengthen the scale of crayfish research and enhance the cooperative research. |
