| Abstract: | When people eat bananas and when food processors make banana products, a large number of banana peels are usually discarded as garbage, which cause environmental pollution and waste of resources when they decay. In view of this, the extraction and isolation of banana peel polysaccharides from banana peels for recycling can produce great economic and environmental benefits. Polysaccharides from banana peel were extracted by water extraction and alcohol precipitation method in this research, and the content of polysaccharides was determined by phenol sulfuric acid colorimetry after protein removal. Orthogonal design method was used to optimize the extraction process. The optimized conditions were as follows: extraction temperature 90°C, extraction times 2 times, extraction time 1.5h, solid-liquid ratio 1:20. Under these conditions, by comparing the differences of polysaccharides extracted from banana peels with different degrees of freshness, it was found that the fully yellow banana peels had the highest polysaccharide content, and the products extracted from banana peels were prepared according to the designed prescription. |
